Ingredients

  • 2 tsp avocado or olive oil
  • 1/2 cup small diced celery
  • 1/2 cup small diced onion
  • 1/2 cup small diced carrot
  • 2 cloves garlic, minced
  • 3 cups thinly sliced mushrooms
  • 12 ounces diced, cooked turkey meat
  • 2/3 cup barley
  • 1/4 tsp dried tarragon
  • 1/4 tsp dried thyme
  • 1 bay leaf
  • 4 cups turkey, chicken, or vegetable stock
  • salt and pepper to taste

Instructions

  1. Heat the oil in a soup pot over medium heat. Add the celery, onion, carrot and garlic and cook until tender about 3 minutes.
  2. Add the remaining ingredients and bring to a boil.
  3. Reduce the heat so the soup is simmering.
  4. Simmer for 20 - 30 minutes until the barley is tender.
  5. Store leftovers in the refrigerator or freezer.
