Ingredients

  • 1 cup buckwheat flour
  • 1 tbsp chia seeds
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp ground cardamom
  • 1 1/2 large ripe bananas, mashed
  • 3 tbsp milk of choice
  • 3 tbsp orange juice
  • 1 tbsp orange zest
  • 3 tbsp maple syrup or honey
  • 2 tbsp avocado oil
  • 1/2 tsp vanilla
  • 1 egg, lightly beaten
  • 3/4 cup raspberries, lightly mashed
  • 1 tbsp oatmeal or buckwheat flakes (optional)

Instructions

  1. Preheat oven to 350 degrees F. Lightly butter, or insert muffin liners, a 6 cup muffin pan. Set aside.
  2. In a large bowl combine the buckwheat flour, chia seeds, baking powder, baking soda, salt, and cardamom. Stir to mix thoroughly.
  3. In a smaller bowl, combine the mashed bananas, milk, juice, zest, maple syrup, oil, vanilla, and egg. Whisk to blend well.
  4. Pour the wet ingredients into the dry ingredients and stir to combine.
  5. Add the lightly mashed raspberries and gently stir to incorporate throughout.
  6. Portion the batter evenly into the muffin cups and top with the oatmeal.
  7. Bake for 25 - 30 minutes until the top springs back lightly when touched.
