Ingredients

  • 3 cups water
  • 1/4 tsp salt
  • 1 1/3 cup raw buckwheat groats, rinsed and drained
  • 2 tbsp raw cacao nibs (optional)
  • 4 tbsp chia seeds, any color
  • 3/4 tsp ground cardamom
  • 1/2 tsp ground cinnamon

Instructions

  1. Rinse and drain the buckwheat.
  2. Bring the water and salt to a boil.
  3. Add the remaining ingredients and stir well.
  4. Reduce the heat to low so the mixture is simmering, cover with a lid and cook for 10 minutes.
  5. Turn off the heat but do not remove the lid and let sit for 5 minutes.
  6. Serve as desired. Some good options are hot milk of choice, honey, maple syrup, or sweetener of choice, a pat of butter, fresh fruit, chopped nuts, seeds, and unsweetened coconut flakes.
